These caramel cookies are quick and easy to make with only a handful of ingredients, and a 10-12 minute cooking time.
Jersey Caramels are the perfect candy to use as they melt into the cookie, giving them a rich and chewy center.

Prep: 20 minutes
Cooking: 10-12 minutes
Yield: 16 cookies
INGREDIENTS
60g Unsalted Butter
1/3 Cup Golden Syrup
1/3 Cup Brown Sugar
1 ½ cup Self Raising Flour – Sifted
8 Soft Caramel Candies – Halved
METHOD
Step 1
Preheat oven to 180c.
Step 2
Combine the butter, golden syrup and sugar in a saucepan over a low heat and stir until the sugar is dissolved. Set aside to cool.
Step 3
Add the flour to the butter mixture and mix until a smooth dough forms.
Step 4
Roll tablespoonfuls into balls and place on a lined baking tray.
Step 5
Press to flatten and top each with half a caramel candy.
Step 6
Bake for 10-12 minutes or until golden; leave to cool on the tray. Enjoy!
