Banana muffins are a great thing to bake when you realize the bananas you’ve been meaning to eat for the last week have gotten a little too ripe. This recipe is super simple, using ingredients you probably already have in your kitchen.

Banana Muffins
Prep: 20
Cooking Time: 20-35 minutes
Yield: 12-16 muffins
Ingredients
115g Butter
1 Cup Caster Sugar
2 Eggs
3 Ripe Bananas
½ Teaspoon Bicarbonate of Soda
2 ½ Cups Self-Raising Flour
Method
Step 1
Preheat oven to 160oC.
Step 2
In an electric mixer, combine all ingredients.
Step 3
Use spray-oil to coat a muffin tin.
Step 4
Fill each muffin cup 2/3 full.
Step 5
Cook for 20-35 minutes, or until the tops are golden brown. Once cooked, leave the muffins in the tin for a few minutes so they shrink away from the sides of the tin, making them easier to remove.
